First Choice Velvet Cheesecake

INGREDIENTS

Base
• 1 pack Tennis biscuits
• 75g melted butter

Middle Layer
• 500g cream cheese
• 2 egg yolks
• 100g castor sugar
• 1 tsp vanilla essence
• 250ml Velvet
• 10g gelatine dissolved in 50ml hot water
• 250ml cream whipped

Top layer
• 250ml Velvet
• 10g gelatine dissolved in 50ml hot water

Method

• Crumbled biscuits, mix with butter, press into baking tray
• Soak gelatin in 50 ml hot water
• Place cheese, egg yolk, castor sugar, and vanilla essence in bowl. Beat until smooth
• Add Velvet and gelatine in steady stream, mixing constantly
• Gently fold in the cream
• Pour the filling over biscuit base, set in fridge for 4 hours
• Remove from fridge, add top layer of Velvet (250ml) and gelatin (10g in 50ml hot water)
• Refrigerate 3 hours
