First Choice Velvet Ice Cream Sandwich

INGREDIENTS

  • Velvet ice cream
    • 500ml Velvet
    • Freeze overnight
  • Cookies
    • 150g salted butter (soft)
    • 80g white sugar
    • 80g brown sugar
    • 1 large egg
    • 1 tsp vanilla essence
    • 225g plain flour
    • 1 tsp bi carb of soda
    • pinch of salt
    • 200g choc chips

METHOD

  • Pour 500ml Velvet into tray, freeze overnight
  • Cookies
    • Beat butter and sugar until creamy
    • Beat in vanilla essence and egg
    • Sieve flour, bi carb and salt into mixture – mix with wooden spoon
    • Add choc ships. Stir well
    • Place on tray, bake 8-10 min @ 190˚ C
