Chocolate Cookie Stack

Delicious Chocolate Cookies stacked - because just one bite is not enough!

Ingredients:
For the Cookies:
 1 cup castor sugar
 2 cups cake flour
 ¼ cup ccoa
 200 g First Choice Butter, melted
 1 tsp vanilla essence
 1 tsp baking powder
 2 ml salt
 1 egg
 100 g chocolate chips
For the Ganache:
 160 g chocolate slab
 ¼ cup cream
For the Decoration:
 First Choice Caramel Dessert Topping
 chocolate chips
 cocoa

Directions:
For the Cookies:

1. Preheat the oven to 160C using the convection setting, or 180C without.
2. Add the sugar and First Choice Butter in a bowl and mix together with a wooden spoon.
3. Sift the cake flour, baking powder, vanilla essence and salt into the butter mixture.
4. Add the chocolate chips too and mix together with your hands.
5. Once combined, add the egg and knead the mixture with your hands.
6. Roll out your cookie dough onto a clean surface sprinkled with flour and cut out cookie shapes or simply roll into small balls and press down onto a greased baking tray.
7. Bake for 10 - 20 minutes - the smaller the cookies, the quicker they will be ready.

For the Ganache:

1. Chop the chocolate into small blocks, and place it in a small bowl.
2. Heat the cream in the microwave for 1 minute or until it boils.
3. Pour the hot cream over the chocolate, let it stand for a minute and then use a wooden spoon to stir.
4. If the chocolate hasn’t completely melted after stirring, place the mixture back in the microwave for 10 - 20 seconds at a time, stirring in-between.
5. Once most of the chocolate has melted, melt the rest by just stirring.
6. Cover with some cling wrap and set aside to cool down. Don’t place it in the fridge.

Assembly:

1. If you’d like the cookies to stay crunchy, do this before serving.
2. Place a spoonful of ganache onto 5 cookies, then stack them.
3. Top with chocolate chips, First Choice Dessert Topping and sprinkle with cocoa!
