Lemon Curd Puffs

Enjoy these super easy Lemon Curd Puffs made with First Choice Custard.

Ingredients
For the lemon curd:
 500 ml First Choice Custard
 250 ml lemon juice
 100 ml condensed milk (or to taste)
For the choux pastry:
 250 ml boiling water
 125 ml First Choice Butter
 250 ml cake flour
 2 ml salt
 4 eggs

Directions:

Pre-heat oven to 200 °C

Pour boiling water into a pot with butter and heat until melted.

Stir in the cake flour and salt. Mix well.

Remove from heat and allow to cool.

Add eggs into the mixture one by one, beating very well in between.

Place teaspoons full of batter onto a greased tray and bake for 10mins at 200 °C and then 20mins at 180 °C.
Allow to cool.

Mix together the First Choice Custard, lemon juice and condensed milk until stiff.

Spoon into the puffs and serve!
