Milk Tart filled Crepes 

Festive season has crepe'd up on us! Let's celebrate with these.

Ingredients:
For the pancakes:
 2 cups cake flour
 2 tsp baking powder
 ½ tsp salt
 2 eggs
 500 ml water
 125 ml oil
 125 ml First Choice Milk
 25 ml vinegar
For the milk tart filling:
 500 ml First Choice Milk
 2 extra large eggs, separated
 2 tbsp cake flour
 2 tbsp corn flour
 30 ml First Choice butter
 5 ml vanilla essence
 2.50 ml ground cinnamon
 2 tbsp sugar

Directions:
For the pancakes:

Beat eggs, water, oil, milk & vinegar using an electric mixer.

Sift dry ingredients together and add to mixture.

Beat well until smooth.

Allow to stand for 5 minutes.

Heat small frying pan, and grease only once.

Pour in a dessert spoon of batter at a time and bake until bubbles form.

Toss & bake the other side for 1 - 2 min.

For the milk tart filling:

Bring milk to the boil in the microwave (plus minus 8 minutes)

Beat egg yolks, sugar, flour and corn flour into a smooth paste.

Add beaten mixture to boiling milk and stir vigorously with a whisk.

Microwave for a further 4 minutes.

In a separate bowl, beat egg whites until soft peak stage.

Add butter, vanilla and cinnamon & mix well.

Fold in beaten egg whites.

Assemble:

Cover each pancake with a tbsp of Milk Tart Filling.

Roll up pancakes or fold into triangles. Enjoy!
