Pumpkin Waffles Two Ways

Get the kids to eat their veggies... and then dessert! These waffles cook a little longer, but it's worth it!

Ingredients:
For the Waffles:
 2 cups pumpkin, cooked
 2 cups cake flour
 10 ml baking powder
 2 ml salt
 2 eggs, separated
 80 g First Choice Butter, melted
 5 ml cinnamon
 ¾ cup First Choice Milk
For the Savoury Toppings:
 250 g bacon, fried
 green fig preserve
 honey, for serving
For the Sweet Toppings:
 250 ml First Choice Vanilla Velvet Ice Cream
 Honey
 Mixed Berries
 First Choice Chocolate Velvet

Directions:

Grease & switch on the waffle maker.

Separate the eggs, and beat the egg white until soft peak stage.

Add the rest of the ingredients to the egg yolks and beat well.

Fold in the egg whites and start spooning waffle mix into the waffle maker.

When golden brown, remove from the pan. When making waffle squares, you should be able to get about 8 squares out of the batter.

Plate the pumpkin waffles with bacon, fig preserve and honey for a savoury waffle and use the ice cream, berries and First Choice Velvet for a sweet take!
