Ingredients:

  • 4 tbsp canola oil or any preferred
  • 2 tbsp coriander powder
  • 1 tbsp cumin powder
  • 1 tbsp fresh ginger, grated
  • 3 tbsp cloves garlic, chopped
  • 800 g beef tripe, cleaned
  • 1 kg cow heels, cleaned and cut in slices
  • 3 curry leaves
  • 2 bay leaves
  • 6 cloves cardamom, bruised
  • 1 stick cinnamon
  • 1 tbsp ground turmeric
  • 2 tsp chili powder
  • 1 tbsp curry
  • 2 cups First Choice Amasi, divided
  • salt and pepper
  • water to cook
  • juice of lime
  • fresh coriander to sprinkle

Preparation method:

  1. In a large saucepan, preferably cast iron, add the oil and heat over medium heat, then add the onion and sauté for a few minutes until just soft.
  2. Add the coriander, cumin, stirring constantly, until the spices are fragrant.
  3. Add all the tripe, cow heels and remaining ingredients with only one cup of First Choice Amasi. Stir everything together, cover with enough water and bring to a boil.
  4. Cover the pot and simmer over medium heat for 2-3 hours or until tripe and heels are tender.
  5. Stir in the reserved First Choice Amasi and simmer uncovered for 5 minutes, stirring regularly.
  6. Squeeze the juice of lime and mix it in. Remove from heat, sprinkle with fresh coriander.
  7. Serving Suggestion: with pap and salsa.
