Ingredients:
For the crust:
- 100 g First Choice Butter
- 1 egg
- 1 1/2 cups flour
- 1/2 tsp salt
- 5 tsp oil
- 1 1/3 tsp baking powder
- 5 tsp castor sugar
For the filling:
- 4 eggs
- 1 cup sugar
- 1/4 cup lemon juice
- 3 tubs of First Choice Smooth Cottage Cheese
- 250 ml First Choice Cream
- 1/2 cup cake flour
For the topping:
- fresh berries and fruit for decoration
- First Choice Whipping Cream
- First Choice Strawberry Dessert Topping
Preparation method:
For the crust:
- Pre-heat the oven to 180°C.
- Beat the First Choice Butter and sugar together with an electric mixer until light and fluffy.
- Add the oil and egg, mix well.
- Sift in the flour, baking powder and salt, and mix well.
- Press the dough into a well-greased springform pan. Press firmly into the bottom and the sides. Neaten the edges.
- Bake the crust for 10 minutes and allow to cool down completely.
For the filling:
- Beat the eggs and sugar until light and fluffy.
- Add the lemon juice, First Choice Cottage Cheese, First Choice Cream and cake flour. Mix well.
- Pour the batter into the crust and bake at 180°C for 10 minutes.
- Lower the temperature of the oven to 125°C and bake for an hour.
- Allow to cool completely and decorate with First Choice Strawberry Dessert topping, cream and seasonal fresh fruit & berries.
