Ingredients:

  • 2 eggs
  • 250g FIRST CHOICE Cottage Cheese
  • 125ml FIRST CHOICE Milk
  • 400g can corn kernels, drained
  • 60ml chopped spring onion
  • 80g FIRST CHOICE Mature Cheddar Cheese, grated
  • 375ml self-raising flour
  • Salt and black pepper
  • Olive oil for frying

Preparation method:

1. Add the eggs into a mixing bowl and whisk together. Stir in the cottage cheese, milk, corn, spring onion and grated cheese.
2. Add the flour and salt and mix gently together to make the batter.
3. Heat the oil in a large non-stick frying pan on medium heat. Add heaped tablespoons of mixture, spread evenly to about 8cm in diameter.
4. Turn when crisp and golden on the bottom and cook on the other side, remove and drain on paper towel.
5. Serve the fritters with mashed avocado, crème fraiche and crispy bacon. Sprinkle with more chopped spring onion.

To Serve:
Crème fraiche, crispy bacon, chopped spring onion, avocado slices.
