Ingredients:

Biscuit Crust:

  • 200g crushed biscuits
  • 100g melted butter

Caramel:

  • 395g condensed milk
  • 100g butter
  • A pinch of salt
  • 125ml brown sugar

Toppings:

  • 2-3 bananas, sliced and tossed in a bit of lemon juice
  • First Choice whipping cream
  • Chocolate shavings

Preparation method:

Prepare the Biscuit Crust:

  1. In a mixing bowl, combine the crushed biscuits and melted butter.
  2. Press the mixture evenly into the base of six individual tart pans or ramekins.
  3. Place in the fridge to set while preparing the caramel.

To make the Caramel:

  1. In a medium saucepan, melt the butter over low heat.
  2. Add the brown sugar and stir until dissolved.
  3. Pour in the condensed milk and add a pinch of salt.
  4. Increase the heat to medium and bring the mixture to a gentle boil, stirring constantly.
  5. Continue to boil for 8-10 minutes, stirring all the time, until the caramel thickens and turns a golden brown.

To assemble the Pies:

  1. Remove the biscuit crusts from the fridge.
  2. Pour the caramel over each crust, spreading it evenly.
  3. Allow the caramel to cool and set slightly.

To serve:

  1. Arrange the banana slices over the caramel layer.
  2. Whip the First Choice whipping cream until soft peaks form.
  3. Spoon or pipe the whipped cream over the banana slices.
  4. Sprinkle chocolate shavings on top of the whipped cream.
  5. Chill the pies in the fridge for at least 30 minutes before serving.
