Ingredients:
Biscuit Crust:
- 200g crushed biscuits
- 100g melted butter
Caramel:
- 395g condensed milk
- 100g butter
- A pinch of salt
- 125ml brown sugar
Toppings:
- 2-3 bananas, sliced and tossed in a bit of lemon juice
- First Choice whipping cream
- Chocolate shavings
Preparation method:
Prepare the Biscuit Crust:
- In a mixing bowl, combine the crushed biscuits and melted butter.
- Press the mixture evenly into the base of six individual tart pans or ramekins.
- Place in the fridge to set while preparing the caramel.
To make the Caramel:
- In a medium saucepan, melt the butter over low heat.
- Add the brown sugar and stir until dissolved.
- Pour in the condensed milk and add a pinch of salt.
- Increase the heat to medium and bring the mixture to a gentle boil, stirring constantly.
- Continue to boil for 8-10 minutes, stirring all the time, until the caramel thickens and turns a golden brown.
To assemble the Pies:
- Remove the biscuit crusts from the fridge.
- Pour the caramel over each crust, spreading it evenly.
- Allow the caramel to cool and set slightly.
To serve:
- Arrange the banana slices over the caramel layer.
- Whip the First Choice whipping cream until soft peaks form.
- Spoon or pipe the whipped cream over the banana slices.
- Sprinkle chocolate shavings on top of the whipped cream.
- Chill the pies in the fridge for at least 30 minutes before serving.
