Ingredients:

For the Crust:

  • 200g digestive biscuits, crushed
  • 90g melted FIRST CHOICE butter

For the Filling:

  • 60ml water
  • 10ml powdered gelatine
  • 500g cream cheese (room temperature)
  • 90g castor sugar
  • zest of 1 lime
  • 150ml strawberry pulp
  • 200ml strawberry yoghurt
  • 250ml FIRST CHOICE whipping cream
  • ±15 strawberries, washed, stems removed and halved

To Decorate:

  • 125ml FIRST CHOICE whipping cream, whipped
  • Fresh strawberries

Preparation method:

For the Crust:

  1. Grease and line a 22 cm loose-bottomed cake tin.Combine the biscuits and melted butter and mix well.
  2. Press into the cake tin bottom. Place in fridge for 30 minutes to set

For the Filling:

  1. Sprinkle the gelatine over the water and leave to hydrate for a few minutes.Melt in the microwave for 30 seconds to dissolve the gelatine
  2. Beat together the cream cheese, castor sugar, zest and add the slightly cooled gelatine mixture.Beat in the strawberry pulp and yoghurt.
  3. Whip the FIRST CHOICE whipping cream until stiff.
  4. Fold the whipped cream into the cream cheese mixture

To Assemble:

  1. Line the sides of the greased cake tin with the halved strawberries (cut side facing the cake tin) on top of the crust.
  2. Spoon the filling into the crust and place in fridge for at least 2 hours to set.
  3. Decorate with the rest of the FIRST CHOICE whipping cream and fresh strawberries
