Ingredients:

  • 15ml olive oil
  • 2 garlic cloves, crushed
  • 1 small onion, chopped
  • 1 small red pepper, chopped
  • 400g extra-lean beef mince
  • 5g salt
  • 2g chilli powder or cayenne pepper (you can add more if you like it spicier)
  • 5g barbecue spice
  • 5g smoked paprika
  • 300g chopped Italian tomatoes, tinned60ml tomato sauce
  • 25ml Worcestershire sauce
  • 400ml beef stock
  • 300g tinned red kidney beans, drained and rinsed
  • 210g macaroni, uncooked
  • 150g FIRST CHOICE Gouda Cheese, grated
  • 130g baby Rosa tomatoes, halved and seasoned with salt and freshly ground black pepper
  • chopped fresh coriander OR parsley for serving

Preparation method:

  1. Heat the oil in a large saucepan. Add the garlic and onion and sauté for a few minutes.
  2. Add the chopped red pepper and cook for another minute.
  3. Add the beef and stir on high heat, breaking it up as you stir.
  4. Add all the spices and cook until the meat is starting to fry and there is no more liquid in the saucepan.
  5. Add the chopped tomatoes, tomato sauce, Worcestershire sauce, stock and beans – mix well with the beef and lower the heat to medium.
  6. Stir in the macaroni and place the lid on the saucepan. Cook for 10 minutes until the macaroni is just cooked. Add more stock or water if needed.
  7. Switch off the heat and stir through half of the cheese and the baby tomatoes. Taste and adjust the seasoning as needed, then sprinkle the rest of the cheese on top.
  8. Place the lid on the saucepan again and leave for 5 minutes to allow the cheese to melt.
  9. Sprinkle over the coriander or parsley and serve.
