Ingredients:
For the cupcake:
- 625 ml cake flour
- 250 ml castor sugar
- 7.5 ml bicarbonate of soda
- 2.5 ml salt
- 3 eggs
- 300 ml sunflower oil
- 350 ml First Choice Amasi
- 30 ml lemon juice
- zest of 1 lemon
- 80 ml First Choice Passion Fruit dessert topping
For the passion fruit cream cheese frosting:
- 250 g First Choice Butter, room temperature
- 250 g full fat cream cheese
- 250 g First Choice Passion Fruit Dessert Topping
- 250 g icing sugar, sifted
Preparation method:
For the cupcakes:
- Preheat the oven to 180°C and line 2 cupcake pans with papers.
- Sieve together the cake flour, castor sugar, bicarbonate of soda and the salt. Mix well.
- In another bowl – mix together the eggs, oil, First Choice Amasi, lemon juice, lemon zest and the First Choice Passion Fruit Dessert Topping.
- Add the liquid ingredients to the dry ingredients and mix very well to make the batter.
- Spoon the batter into 24 muffin cups and bake for 18-20 minutes in the preheated oven.
For the passion fruit cream cheese frosting:
- Beat the First Choice Butter and cream cheese together for a few minutes.
- Add the icing sugar and the First Choice Passion Fruit Dessert Topping and beat well until very light and fluffy.
- Spoon the frosting into a piping bag.
To decorate:
- Use a knife to cut out a cone in the centre of the cupcake and fill with a little of First Choice Passion Fruit Dessert Topping.
- Pipe the frosting on the cupcakes and drizzle with a little passion fruit topping.
