Ingredients:
For the Stew:
- 500 g beef mince
- 1 onion
- 2 cloves garlic
- 30 ml First Choice Olive Oil
- salt & pepper for seasoning
- 10 ml paprika
- 15 ml barbeque spice
- 5 ml chilli flakes
- 300 ml tomato, chopped
- 100 ml beef stock
- 300 g tinned mixed beans, rinsed and drained
- 70 g tomato paste
- 30 ml worcestershire sauce
For the Dombolo (Dumplings):
- 375 ml flour
- 10 ml baking powder
- freshly ground pepper
- pinch of salt
- 60 ml fresh herbs (parsley, rosemary, thyme), chopped
- 80 g First Choice Butter, room temperature
- 220 ml First Choice Amasi
- egg wash for brushing
Preparation method:
For the Stew:
- Heat the First Choice Olive Oil in a large frying pan and add the onion and garlic. Cook for a few minutes until the onions are soft.
- Add the mince and cook until cooked and dry, stir all the time to break up the mince.
- Season and add all the spices.
- Add the chopped tomato, beef stock, beans, tomato paste and the Worcestershire sauce.
- Simmer for 10 minutes on low heat.
For the Dombolo (Dumplings):
- Sieve together the flour, baking powder, salt & pepper. Mix in the chopped fresh herbs.
- Rub in the First Choice Butter - using your fingertips.
- Add the First Choice Amasi and use a knife to mix it gently into the dry ingredients to make a soft dough.
- Place the dough on a lightly floured work surface and pat it out to about 2 cm thick.
- Use a cookie cutter to cut out rounds to make your dumplings.
- Place all the dumplings on top of the stew, space evenly and brush with egg wash.
- Cover the pan with a lid or foil and bake for 10 minutes covered.
- Remove the foil and bake for another 10 minutes until the dumplings are golden brown and cooked.
- Sprinkle with more chopped fresh herbs and some paprika.
